I'm looking for the Z-bar type handlebars that point downward, the kind you see on cafe racers. Does anyone know where to get a set that will fit a 1970 KO ?

You're talking about a roll-your-own proposition. Start with a pair of old bars with bad chrome...that's about 95% of them. That gives you cheap raw material with the proper locking tabs and 4 bends; even the internal twist grip throttle can be retained. Cutting, welding, metalfinishing and chrome plating are all required. Next, figure out the precise R+L grip positions, then cut & section the bars to fit. At this point, it's even possible to swap R&L bar sections to get exactly what you want. If you want to retain the ability to fold the bars for ease of storage/transport, then you're going to have to limit the configuration to something that will still clear the fork legs in "down" position without causing damage; otherwise you're only limited by your creativity. Not the easiest project in the world, but certainly possible and the results will be truly one-of-a-kind.
FWIW, I know of a couple of hardtail Z50s with CT70-based bars that were customized this way...~6" removed from the vertical sections. The results, while not what I'd do, were excellent.
Ooorrrrrr.
